I got this recipe from a friend and I seriously love it it is so versatile and so good.
I did make a few changes and I don’t have a picture of the original recipe.
First brown a pound of Hamburger (pork, ground turkey, whatever you want to use.) Add chopped onions and Bell peppers. (I skip the peppers and onions if I don’t have them).
Add a package of taco seasoning. I use my homemade and I add a little extra.
Add two cans of rotel or stewed tomatoes, I use my home canned rotel. You can also use an emulsion blender on the canned rotel if members of the family don’t like chunky tomatoes. (I just open the can and blend it in the can).
Add two cans of black beans or any bean you want, it is good with pintos also.
Add 2 cups of rice. You can use cooked rice or instant if using instant only use a cup of rice.
Bring to a boil and let simmer (until rice is done if using instant rice) for 20 to 30 minutes.
Serve over tortilla chips or as a soup.
Super easy and super good. This freezes really well, If I have some left over I put in individual containers and put in the freezer for a quick meal.
