  1. Mix the spices in a bowl and set aside
  2. We started with 50 pounds of meat and divided it into two bowls 25 pounds each
  3. Add half the spice mixture to one bowl meat and the rest to the other bowl.
  4. Then mix it by hand real well until well coated
  5. If the meat didn’t have much fat in it add little fat in.
  6. Then grind it up adding the fat as you go.
  7. Then do the the second bowl the same way.
  8. You can freeze some in patties, some in half pound or one pound packages and you can can some. I have already canned breakfast burrito filling using it.
